Ingredients:

For the Chicken:

  • 2 large boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 3 tbsp butter
  • 2 tbsp olive oil

For the Garlic Butter Sauce:

  • 1/4 cup butter
  • 3 garlic cloves, minced
  • 1/4 cup white wine (optional)
  • 1/4 cup heavy cream
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions:

Step 1: Prepare the Chicken

  1. Season the chicken breasts with salt and pepper. If the breasts are thick, consider pounding them to an even thickness for faster cooking.
  2. Dredge each chicken breast in flour, dip in beaten eggs, and then coat with breadcrumbs.

Step 2: Cook the Chicken

  1. Heat butter and olive oil in a large skillet over medium heat.
  2. Add the breaded chicken and cook until golden brown and cooked through (about 5-6 minutes per side, depending on thickness).
  3. Remove the chicken from the skillet and set aside, keeping it warm.

Step 3: Make the Garlic Butter Sauce

  1. In the same skillet, add the butter and minced garlic. Sauté until fragrant (about 1 minute).
  2. Stir in the white wine (if using) and let it reduce for 1-2 minutes.
  3. Add the heavy cream, lemon juice, salt, and pepper. Let it simmer until the sauce thickens slightly.

Step 4: Serve

  1. Plate each chicken breast and generously spoon the garlic butter sauce over the top.
  2. Garnish with fresh parsley and serve with your favorite side, like mashed potatoes or steamed vegetables.
